I found a few chicken risotto recipes on the net and combined what I thought were the best bits into this one recipe.

- 200 grams of chicken boobie cut up
|

Combine stock, tomatoes, herbs and bring to the boil stirring.
Add rice and simmer. Stir well as it will stick and burn in a flash.
Whilst rice is cooking, dry fry chicken, onion, zuchini and mushrooms.
Rice is ready when liquid is absorbed and it is at the desired consitancy. Add more liquid during cooking if nessecary.
When rice is ready add in the fried ingredients and stir through the cheese.
Serve immediately.
